Pan-Seared Scallops with Cilantro-Celery Mayonnaise

Ingredients
• 1/4 cup low-fat mayonnaise
• 2 tablespoons minced celery
• 2 teaspoons minced fresh cilantro
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 1 teaspoon olive oil
• Cooking spray
• 1 1/2 pounds sea scallops
• 1/4 cup Italian-seasoned breadcrumbs
• 4 lime wedges

Directions
1. Combine the first five ingredients
2. Heat the oil in a large nonstick skillet coated with cooking spray over medium to high heat
3. Cover the scallops in breadcrumbs
4. Add scallops to pan
5. Cook for 4 minutes
6. Turn scallops, and cook 3 minutes or until done
7. Serve with mayonnaise mixture and lime wedges
8. Enjoy!
